To me the greatest food on earth is real cajun food. My Grandmother taught me how to make gumbo using a piggly wiggly brown paper bag to gauge the color of the roux. Book is clearly written and has some good tips as well as recipes. Besides I like this guy--he is kind.

Every recipe I have made has been top notch. Most recent one was Cornish Hens with Aunt Dorothy’s stuffing and Dirty Rice. Just great.....

Great cookbook from a great chef, and Culinary Ambassador of New Orleans La. Chef Keven Belton. I record both of his cooking shows from PBS and if you like Alton Brown you will like Kevin, there not alike but both unique in their ways. Belton's recipes, if you like something add it in, if you don't like it leave it out. Read the book and you will see and feel you know a man that loves his family, community, city , and State.This is my second of his cook books.Kevin Belton's Big Flavors of New Orleans, was my first which made me a fan

And care went into this book, you can tell from the photos and the anecdotes how much Kevin cares. The recipes are all unique and interesting, filled with anticipation on cooking though thus book. Recommend must buy.

This book is as good,possibly better than his first one. It will take me a while to cook through this new collection of recipes but it is a delightful read.

Love Kevin Belton and this book, which contained highly anticipated recipes I really wanted to try. I especially enjoy reading his tips and introductions to each recipe. Knowing the story behind each dish only enhances the enjoyment when you actually taste it.

I really like Kevin Beltons cookbook on New Orleans cooking. The ingredients are easily obtained and if you have the chance to pair it with his show on Create TV you will pick up great technique and tips. The only downfall was in both the books and the show he fails to give the ingredients for Creole seasoning. I live in rural NH and our stored don't stock for that. I did look it up on the web and now I make may own
